Corn Salsa

Ingredients

  • Dressing:

  • 1/3

    c water

  • 1/3

    c sugar

  • 1/4

    c white balsamic vinegar

  • 2

    tblsp olive oil

  • Main ingredients:

  • 4

    c frozen yellow corn, defrost & rinse

  • 1

    small purple onion

  • 1

    red bell pepper

  • 1

    medium skinny zucchini

  • 1/2

    c chopped cilantro

  • 1/2

    tsp fresh ground pepper

  • salt to taste

Directions

Mix veggies. set aside. Combine water & sugar(warm if needed to disolve fully). Add white balsamic vinegar & olive oil. Add Pepper. Stir well. Pour dressing & mix thoroughly.
