Ingredients

  • 1 (10oz) pkg frozen chopped spinach
  • 2 (13 3/4 oz) cans artichoke hearts
  • 1/2 cup mayonnaise
  • 1/2 cup sour cream
  • 1 cup freshly grated parmesan
  • 1 cup grated pepper jack cheese

Preparation

Step 1

1) Preheat oven to 350 degrees
2) Grease a casserole dish with non-stick spray (2qts)
3) Heat the spinach in the microwave for 5 minutes and squeeze dry.
4) Drain the artichokes and coarsely chop in the food processor.
5) Combine all the ingredients except the jack cheese in a large bowl. Stir well.
6) Scrape into the prepared casserole dish and sprinkle the jack cheese on top.
7) Bake for 30 minutes.
8) Transfer to a chafing dish and keep warm over a low flame.
9) Serve with bagel chips
