Kale White Bean and Sausage Stew

Ingredients
- 2 tbsp cooking oil
- 1 lb italian sausage
- 2 onions, chopped
- 3 cloves garlic, minced
- 1 medium yukon gold potato, chopped
- 1 lb kale, tough stems removed, chopped and well shredded
- 1 can of diced tomatoes with juice
- 1 1/2 cups of chicken stock
- 1/2 - 1 tsp of salt to taste
- pepper
- 1 tsp - 1 tbsp smoked paprika
- 2 (15oz) cans of cannellini beans, drained and rinsed

Preparation
Step 1
place 1 tbsp of oil in a dutch oven or soup pot over moderate heat. add sausage and brown, breaking with a fork or wooden spoon. Set aside. add remaining oil to pan and then stir in chopped potato. cook for several mins until starting to brown and then add onion. cook stirring occasionally until the onions start to soften, about 3mins. add the garlic, kale and paprika to pan, stirring until kale wilts, about 2mins. Stir in tomatoes, chicken stock, salt and pepper and add back sausage. bring to a simmer. reduce the heat and simmer, covered, until the kale is tender, about 15mins.
Stir in the beans and cook until warmed through about 5mins. Serve.
