Ingredients

    tablespoons olive oil

    bunch green onions sliced

  • 4

    plum tomatoes chopped

  • 1

    red bell pepper chopped

  • 6

    oil-packed sun-dried tomatoes drained, chopped

    garlic cloves minced

  • 1/4

    teaspoon dried oregano crumbled

  • 1

    tablespoon chopped fresh parsley

  • 1

    tablespoon chopped fresh basil (or 1 tspn dried basil, crumbled)

  • Salt to taste

  • Freshly-ground black pepper to taste

    ounces spinach linguine or spaghetti freshly cooked

    ounces soft goat cheese sliced (such as Montrachet)

Directions

Heat oil in heavy large skillet over medium heat. Add next 6 ingredients and saute until onions are tender, about 15 minutes. Stir in parsley and basil. Season with salt and pepper. Add pasta; toss thoroughly. Divide pasta between 2 plates. Top each with half of goat cheese. This recipe yields 2 servings.
