Grilled Soy-Lemon Halibut

Ingredients
- 2 Tbsp butter or margarine, melted
- 3 Tbsp soy sauce
- 2 Tbsp lemon juice
- 1 Tbsp sugar
- 1 Tbsp Worcestershire
- 1 Tbsp minced fresh ginger or 1/2 tsp ground ginger
- 1 garlic clove, minced or pressed
- 1/8 tsp pepper
- 6 halibut, shark or sea bass steaks or fillets (about 1 inch thick; 2 pounds total)
- Lemon wedges

Preparation
Step 1
1. In a shallow dish, stir together butter, soy, lemon juice, sugar, Worcestershire, ginger, garlic and pepper.
2. Rinse fish and pat dry; add to marinade. Cover and refrigerate for 1-2 hours.
3. Lift fish from marinade and drain briefly (reserve marinade).
4. Cook on grill, turning once and basting with marinade sever times, until fish flakes when prodded in thickest part (8-10 minutes).
5. Transfer fish to a warm platter and serve with lemon wedges.
