Citrus & Ginger Roasted Broccoli (WW)
Serves 4. 1 WW pt.
- 1 LG head Broccoli, cut into Lg florets with some stem
- 1 T EVOO
- 1 T low sodium soy sauce
- 2 t orange juice
- 2 t orange zest
- 1 1/2 t minced fresh ginger root
- 1 1/2 t minced garlic
Preheat oven to 450. Line Lg baking sheet with parchment paper or coat pan with cooking spray. Toss Broccoli with oil; spread on prepared pan in an even layer. Roast, stirring once halfway through, until lightly browned about 20-25 min.
While Broccoli roasts, in sm bowl whisk together soy sauce, orange juice, orange zest, ginger & garlic. Immediately drizzle roasted broccoli with orange mixture & serve.
Yields 1 c Broccoli per serving.
