Upside-Down Strawberry Meringue Pie

Ingredients

  • 3 egg whites
  • 1/2 tsp. vinegar
  • 1/4 tsp. salt
  • 1/2 cup sugar
  • 1/2 tsp. vanilla
  • 1 9" baked pastry shell
  • 3 cups fresh strawberries
  • 1/3 cup sugar
  • 2 tbsp. cornstarch
  • 1/2 cup water
  • 1 cup whipping cream

Preparation

Step 1

Beat egg whites with vinegar and salt to form soft peaks. Gradually add the 1/2 cup sugar and vanilla, beating to stiff peaks.

Spread on bottom and sides of baked pastry shell. Bake at 325 deg. for 12 minutes and cool.

Mash and sieve 2 cups of strawberries. Blend together remaining sugar and cornstarch. Add water and berries. Cook until mixture thickens and boils. Cook 2 minutes. Spread over meringue. Chill until set.

Whip cream and spread over all. Slice remaining berries into fans over the top.
