Blueberry-Oat Muffins

Ingredients

  • 1 cup rolled oats
  • 1 cup sour milk
  • 1 cup flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 salt
  • 3/4 cup brown sugar
  • 1 egg
  • 1/4 cup melted margarine
  • 1 cup blueberries, well drained

Preparation

Step 1

Combine first 2 ingredients in small bowl. Let stand.
Combine next 5 ingredients in bowl. Stir well to blend.
Add egg and melted margarine to milk and oats.
Stir well.
Add oat mixture all at once to dry ingredients.
Stir just until all ingredients are moistened.
Gently fold in blueberries.
Fill well-greased muffin tins 3/4 full.
Bake at 400 for 15-22 minutes.
