Chicken Orange and Almond Stir-Fry

Ingredients
- 1/2 cup orange juice
- 1 teaspoon cornstarch
- 2 tablespoons vegetable oil
- 1 pound boneless chicken, cut in strips
- 1 medium onion, halved and thinly sliced
- 1 cup thinly sliced carrot
- 1 cup thinly sliced celery
- 1 cup broccoli florets
- 1 tablespoon grated ginger root or 1/2 tsp ground ginger
- 1/4 cup chicken stock
- 1 tablespoon grated orange rind
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 2 tablespoons toasted almonds

Step 1
Mix orange juice and cornstarch. Set aside. In a wok or large skillet, stir fry chicken in oil for 5 minutes. Remove and set aside. Add onion, carrots and celery to wok and stir fry 2 minutes. Add broccoli, ginger and chicken stock. Cover and cook 3 or 4 mintues or until vegetables are tender crisp.
Return chicken to wok. Add orange juice mixture, orange rind, salt and pepper. Cook until sauce is thickened. Sprinkle with toasted almonds. Serve immediately.
