Grilled Pork Tenderloin with Corn Bacon Relish

Ingredients
- Relish:
- 2 Pork tenderloins
- kosher salt
- pepper
- 2 tbls fresh chopped thyme
- 2 tbls fresh chopped rosemary
- olive oil
- balsamic vinegar
- 2 cups corn (fresh or frozen)
- 4 tbls maple syrup
- 3 slices of bacon, diced
- 1 large yellow onion
- 1 tsp fresh chopped sage

Preparation
Step 1
Rub tenderloins with salt, pepper. Drizzle with olive oil and sprinkle with fresh chopped rosemary and thyme. Cover with balsamic vinegar and bake at 400 until meat reaches 170 degrees. (about 30-40 minutes)
Saute corn with maple syrup until golden brown and caramelized. Remove from pan. Add bacon and cook over medium heat until crisp. Add onion and cook until clear. Add corn and cook 2 minutes more. Stir well, set aside.
