Almond Crusted Orange Ruffy (or Tilapia)

Ingredients
- 4 orange ruffy filets (or other white fish)
- 2 eggs
- 1 tsp. lemon pepper
- 1/4 tsp. garlic salt
- 1/2 cup silvered almonds (2.25 oz pkg)
- 1/2 cup parmesan cheese, grated

Preparation
Step 1
. Preheat oven to 425.
2. In a shallow dish, beat eggs with lemon pepper and garlic salt. Set aside.
3. In a food processor, pulse almonds until fine.
4. Transfer almond ‘powder’ to another shallow dish. Add parmesan and combine.
5. Lightly grease a rimmed baking sheet.
6. Dip filets into eggs wash and then coat in almond/parmesan mixture. Use your hands to press mixture onto each side of the filet if necessary.
7. Transfer coated filets to prepared baking sheet and bake 8-10 minutes, flip, and bake another 4-5 minutes. Be sure to keep an eye on your filets. Baking times vary greatly depending on the thickness of the filets.
