Carrot Pineapple Muffins

These are our favourite muffins - they are very moist and very tasty. I like to take one to work to go with my coffee.

Ingredients

  • 2 cups flour
  • 3/4 cups brown sugar
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 1 tsp ginger
  • 2 eggs
  • 1/2 cup oil
  • 1 cup grated carrot
  • 1 cup crushed pineapple and juice

Preparation

Step 1

Mix dry ingredients in a large bowl and make a well in middle and set aside

Beat eggs until fluffy. Mix in oil, carrots and pineapple.

Stir in only to moisten - batter should be lumpy. Fill greased muffin tins. Bake at 400 for 20 - 25 minutes. Remove from pan after 5 minutes. Set on rack to cool.
