Ingredients

  • Dressing:
  • 1/3 c. cider vinegar
  • 3/4 c. sugar
  • 2 tbsp. lemon juice
  • 1 tsp salt
  • 1 c. vegetable oil
  • 1/2 small red onion, grated
  • 1 tsp dry mustard
  • 1/2 tsp paprika
  • 1-1/2 tbsp poppy seeds
  • Salad:
  • 1 lb. fresh spinach leaves, washed and torn into small pieces
  • 1 can hearts of palm, drained and sliced
  • 2 c. strawberries, stemmed and sliced
  • 1 c. walnuts

Preparation

Step 1

For the dressing:
Combine vinegar, sugar, lemon juice and salt in a small non-reactive saucepan. Heat over medium heat until sugar dissolves, stirring frequently. Remove pan from heat and cool to room temperature. When cooled, whisk in oil, poppy seeds, dry mustard and paprika until thoroughly combined. Set dressing aside.

In salad bowl, combine spinach, hearts of palm, strawberries and walnuts. When ready to serve, toss with dressing.
