Roast chicken with zucchini, carrot and onions

Ingredients

  • 2 lbs zucchini, halved crosswise and quartered lengthwise
  • 3/4 lb carrots, cut into 1/2 inch pieces
  • 2 medium red onions, quartered
  • 2 tbsp olive oil
  • Salt and pepper
  • 4 boneless skinless chicken breasts

Preparation

Step 1

Preheat oven to 400. In a large bowl, toss veggies with oil, season with salt and pepper. Spread onto 2 rimmed baking sheets and roast 20 minutes. Add chicken in another baking sheet, cover with foil, and bake with veggies for 20 more minutes. Slice chicken and serve with veggies.
