Speedy Tomato, Chick-Pea and Spinach Soup

Ingredients
- 2 cups vegetable stock
- 1 onion, chopped
- 1/4 tsp dried sage
- 1 can (19 oz) chick peas, drained
- 1/4 tsp pepper
- 1 can (28 oz) tomatoes, undrained
- 1 clove garlic, minced
- 1 cup rotini pasta
- 2 cups chopped fresh spinach
- dash hot pepper sauce

Preparation
Step 1
In a large saucepan, combine stock and tomatoes, breaking up with a fork. Add onion, garlic and sage. Bring to a boil. Add pasta and reduce heat to med-low, cover and simmer for 7 mins. Add chick peas and spinach. Cover and cook for 3 mins or until pasta is tender but firm. Stir in pepper and hot pepper sauce. Taste and adjust seasoning.
Makes 8 cups 4-6 servings
Sprinkle with some parmesan. Serve with focaccia for a soul-satisfying meal!
