Rich Lobster and Corn Chowder

Ingredients
- 3 cups corn kernels
- 1 1/2 tbsp olive oil
- 1 tsp salt, divided
- 1/2 tsp ground black pepper, divided
- 4 slices bacon, chopped
- 2 cups chopped onions
- Pinch cayenne pepper
- 1 lb raw potatoes, peeled and diced
- 3 cups chicken stock
- 2 cups clam juice
- 1 1/2 cups whip cream
- 2 tbsp unsalted butter
- 3 cooked lobster tails
- 3 tbsp fresh chives

Preparation
Step 1
Oven 425, baking sheet
On baking sheet, combine corn, oil, 1/2 tsp salt and 1/4 tsp pepper. Toss to coat evenly and spread in a single layer. Roast in oven for 10 minutes
Stir and redistribute into an even layer. Roast until corn is lightly browned. 10-15 minutes
Set aside
In large pot, saute bacon until browned and crispy. Set aside
Keep 2tbsp of bacon fat. Add onions and saute until lightly browned.
Add cayenne and saute 1 minute
Add potatoes, stock, clam juice and remaining S&P. Bring to a boil
Reduce heat and simmer 15 minutes.
Stir in roasted corn and cream. Return to simmer until potatoes are tender. (Do not boil)
In large skillet melt butter. Add lobster and saute until heated through.
Ladle chowder into bowls and top with lobster.
Garnish with bacon and chives
