Lime in the Coconut Cupcakes

Ingredients
- 1 3/4 - 1 3/4 cup all-purpose flour
- 1 - 1 cup granulated sugar
- 1/4 - 1/4 tsp Salt
- 2.5 - 2.5 tsp baking powder
- 2 - 2 eggs separated, the whites beaten until stiff
- 1 - 1 tsp coconut extract
- 1/2 - 1/2 cup fresh key lime juice
- 1/2 - 1/2 cup butter, softened at room temperature
- 1/2 - 1/2 cup shredded, unsweetened coconut

Preparation
Step 1
1. Prheat oven to 350 degrees F.
2. In a medium bowl. mix together flour, salt and baking powder. Set aside.
3. In a large bowl, combine butter, sugar, egg yolks and extract, use a hand mixer to mix until well combined and creamy.
4. Add flour mixture to wet mixture about a third at a time, alternating with lime juice. Mix well!
5. Line a cupcake platter with liners (I used dark brown here) then fill each cupcake liner with batter just over half full.
6. Bake for about 18-22 minutes or until toothpick inserted comes out clean.
7. Remove from tin and allow to cool down before icing.
