Ingredients
- 1 Cup Brown Sugar, firmly packed
- 1 Cup Sugar
- 1 Cup Vegetable Oil
- 3 Cups Flour
- 2 tsp. Baking Powder
- 1 tsp. Baking Soda
- 1/2 tsp. Cinnamon
- 1/2 tsp. Nutmeg
- 1/2 tsp. Ground Cloves
- 1/2 tsp. Salt
- 1 Cup Carrots, grated
- 4 Eggs, lightly beaten
- 1 Cup Whole Berry Cranberry Sauce
- 1 Cup Walnut or Pecans, chopped
- Cream Cheese Frosting

Step 1
Cream sugars and oil. Add dry ingredients alternately with remaining wet ingredients. Stir in nuts. Pour into well greased 2 quart mod or Bundt pan. Bake at 350 degrees for 1 1/2 hours if using mold or 1 hour 10 minutes if using Bundt pan. Remove from pan and drizzle with a thinned cream cheese frosting or even a powdered sugar, butter glaze.
