Spinach Turkey Meatball Pasta

Ingredients
- ● 1 tbsp. olive oil
- ● 6 ounces ground turkey
- ● 1 red onion, minced
- ● 2 cloves garlic, minced
- ● 1 tomato, chopped
- ● 1 cup chopped spinach
- ● 4 ounces spaghetti
- ● 1 1/2 cups water (or broth)
- ● Salt
- ● Pepper
- ● 2 tbsps. Parmesan cheese (optional)

Preparation
Step 1
1. Heat olive oil in a pan over medium heat.
2. Once hot, add turkey, onion, and garlic, and cook 5 minutes until browned.
3. Add tomato and spinach, and cook for 2 minutes.
4. Add pasta and water, and bring to a boil.
5. Turn heat to low and simmer with the lid on for about 20 minutes or until water reduces to form a light sauce.
6. Add salt and pepper to taste.
7. Garnish with Parmesan, if desired.
