Mushroom Kale Soup

Ingredients
- 2 TBSP olive oil
- 3/4 c finely chopped onion
- 3/4 c carrots
- 3/4 c celery
- 1 pound mushrooms, sliced
- 1 large potato peeled and diced
- 1 TBSP minced garlic
- 3 cups water plus more if needed for thinning
- 14 oz can unsweetened coconut milk
- 4 cups chopped kale
- 2 tsp kosher salt
- 1 tsp black pepper
Details
Preparation
Step 1
In a large pot heat oil over medium high
Add onions, carrots and celery
Cook, stirring,5 min
Add mushrooms, potato and garlic
Cook 5 min
Raise heat to high and add water and coconut milk
Bring to a boil
Reduce heat to low and simmer, uncovered, 30 min or until vegetables are tender
Stir in kale
Cook until wilted, about 5 min
Season with salt and pepper
Puree until smooth
