Ingredients

  • 4 chicken thighs, trimmed of excess fat
  • 3/4 tsp ground coriander
  • 3/4 tsp oregeno
  • 3/4 tsp thyme
  • 3/4 tsp ground black pepper
  • 2 cups apple cider
  • 1/2 head of red cabbage (shredded)
  • 1 large red onion (sliced thin)
  • 3 tbs red wine vineger
  • 1 tbs sugar
  • 1 tbs olive oil
  • optional;
  • 2 sweet apple/chicken sausages

Preparation

Step 1

to lighten the meal remove the skin from the chicken if you wish
combine the herbs and spices in a plastic bag and add chiken and shake to coat
heat oil in a saute pan
when hot, brown the thighs on both sides
remove chicken from pan pour off the fat and add cider, boil to reduce by half scrapping the brown bits up, then
add shredded cabbage to pan reduce heat to medium, cover and cooked to wilt about 10 to 15 mins
add vineger and sugar
return chicken to the pan atop the cabbage cover with onions put the lid back on reduce heat to low and cook for about 20 mins
optional; add sausages about 10 mins into cookin
serve over brown rice
