Mexican-Style Pineapple and Watermelon

Ingredients

  • Bring-the-Heat Chile Topping:
  • 12 ounces fresh pineapple, cubed
  • 12 ounces fresh watermelon, cubed
  • Juice of 1 lime
  • 1/2 teaspoon salt, or to taste
  • Chile powder, to taste
  • Cool-it-Down Mint Topping:
  • Handful of fresh mints leaves, chopped
  • 1/4 cup sugar
  • Additional mint for garnish (optional)

Preparation

Step 1

Add pineapple and watermelon to a large bowl and sprinkle with lime juice.
For Chile Topping:

Sprinkle fruit with salt and toss to distribute with lime juice. Plate servings and sprinkle with chili powder to taste.

For Mint Topping:

Muddle mint and sugar together for a few minutes until mint is well incorporated and sugar has darkened. Plate servings, top with sugar and additional mint (optional) and serve immediately
