Mexican-Style Pineapple and Watermelon

Ingredients
- Bring-the-Heat Chile Topping:
- 12 ounces fresh pineapple, cubed
- 12 ounces fresh watermelon, cubed
- Juice of 1 lime
- 1/2 teaspoon salt, or to taste
- Chile powder, to taste
- Cool-it-Down Mint Topping:
- Handful of fresh mints leaves, chopped
- 1/4 cup sugar
- Additional mint for garnish (optional)

Preparation
Step 1
Add pineapple and watermelon to a large bowl and sprinkle with lime juice.
For Chile Topping:
Sprinkle fruit with salt and toss to distribute with lime juice. Plate servings and sprinkle with chili powder to taste.
For Mint Topping:
Muddle mint and sugar together for a few minutes until mint is well incorporated and sugar has darkened. Plate servings, top with sugar and additional mint (optional) and serve immediately
