Squash with bacon and onion

Ingredients
- 8 slices thick cut bacon (the smokier, the better)
- 1 medium onion, thinly sliced
- 2 lbs butternut squash, peeled and thinly sliced
- Salt and pepper to taste
- Grated parmesan taste
- Butter (optional)

Preparation
Step 1
Preheat oven to 350.
Precook bacon until tender (some brown but not totally crisp-it will be in the oven later). Tear into large pieces (about 1 inch square)
Place the onion and bacon in a 13x9 baking dish. Place squash on top. Salt an pepper to taste. Cover and bake until squassh is almost tender (around 30 minutes). Remove from oven.
Increase oven temp to 400. Stir the mixture. Place pads of butter across the top (optional). Sprinkle with parmesan cheese. Bake uncovered until cheese is melted and squash is tender (about 10 minutes).
