Lemon Pasta with Roasted Shrimp

Ingredients
- 2 lbs shrimp, peeled and deveined (tails off)
- olive oil
- salt and pepper
- 1 lb spaghetti or angel hair pasta
- 1/2 stick butter, melted
- zest and juice of 1 lemon.

Preparation
Step 1
Preheat oven to 400. Place shrimp on a sheet pan with 1 tbsp olive oil, salt and pepper. Toss well, then spread into one layer and roast for 6-8 minutes, until pink.
Meanwhile, cook pasta in salted water until al dente. Reserve some of cooking liquid, and drain pasta. Toss pasta with melted butter, 1/4 cup olive oil, lemon zest, lemon juice, 1/2 cup cooking liquid, salt and pepper. Add shrimp, toss once to coat, and serve.
