Cornbread with Bacon Crust

Ingredients
- 10 thick cut bacon slices
- 1 1/2 cups cornmeal
- 1 1/2 cups flour
- 3 tbsp brown sugar
- 1 tbsp baking powder
- 1 tsp salt
- 1 1/2 cups milk
- 3 eggs
- 3 tbsp honey
- 2 tbsp butter, melted
- 2 cups frozen corn kernels.

Preparation
Step 1
Cook bacon in large skillet over medium until crisp. Drain on paper towels. Reserve 2 tbsp drippings from pan. Crumble bacon into small pieces.
Preheat oven to 350. Coat 9 or 10 inch baking dish with bacon drippings. Whisk cornmeal, flour, brown sugar, baking powder and salt together. In another bowl, whisk together milk, eggs, honey and butter. Add wet mix to dry mix, then stir in frozen corn kernels.
Pour batter into pan, then sprinkle with bacon. Bake until golden, 40-50 minutes. Cool at least 30 minutes.
