Zucchini Pancakes

Ingredients
- 1 c flour
- 3/4 tsp baking soda
- 1/4 tsp salt
- 2 eggs separated
- 1 c buttermilk
- 1 TBSP honey
- 2 TBSP melted butter
- 1 C coarsely shredded zucchini
- 2 TBSP flaxmeal
- Add 1-2 TBSP flour if pancakes look too thin or cooked around the edges

Preparation
Step 1
1. Whisk the flour, baking soda, and salt together in a mixing bowl. Beat the egg yolks
2. Add the egg yolks and buttermilk to the dry ingredients in a bowl and stir until just combined. Add the honey, melted butter, zucchini and flaxmeal. Stir to combine.
3. Vigorously whisk the egg whites and fold them into the batter . Heat a griddle to medium heat.
4. Pour the batter onto the hot griddle and wait until bubbles form on the top of the pancakes and the edges look dry. Flip once, cook for another few minutes and remove from heat.
