Pork w/ Apples, Bacon, & Sauerkraut

Ingredients
- 3 lb boneless
- 1/2 t salt
- 1/2 t pepper
- 6 oz thin pancetta
- 2 T oil
- 2 small onions, quarterd , root intact
- 12 oz package of frozen pearl onions
- 2 garlic cloves, thinly sliced
- 3 fresh thyme sprigs
- 2 bay leaves
- 1 bottle of stout
- 2 T dijon
- 2 firm apples; gala
- 2 c jarred sauerkraut
- 2 c finely shredded cabbage
- 1 T chopped flat leaf parsley
- 1 t lemon juice
- 1/2 c apricot preserves
- 1/4 c chicken broth

Preparation
Step 1
Trim fat, sprinkle pork with salt and pepper. Wrap top and sides of pork with pancetta. Tie with kitchen string.
Cook pork in hot oil in large skillet. Till golden brown and reserve drippings.
Place quartered onion and next 4 ingredients in a slow cooker. Top with pork. Add beer to reserved drippings and cook.
