Ingredients

  • 6

    large carrots, peeled and cut into quarters lengthwise

  • 1

    tablespoon olive oil

  • 2

    cups frozen baby peas, thawed

  • Your seasoning of choice.

Directions

Prepare carrots, place in ziploc bag with oil and your seasoning (dill is excellent.) Preheat oven to 450 Spread carrots on a cookie sheet or jelly roll pan. Roast for 25 minutes, tossing halfway.
