Ingredients

  • 1 pound fresh asparagus par-boiled
  • 2 tablespoons chopped green pepper
  • 1 tablespoon chopped onion
  • 1/4 cup butter
  • 2 cups plain yogurt
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon tarragon
  • 1 teaspoon lemon juice
  • 12 ounces crab meat
  • 1/2 cup grated Parmesan cheese

Preparation

Step 1

Place asparagus in a 1 1/2-quart shallow baking dish.

In a frying pan saute the green pepper and onion in butter. In a mixing bowl combine yogurt, Worcestershire sauce, tarragon, and lemon juice. Add the green pepper, onion and crab meat.

Pour mixture over the asparagus and sprinkle with Parmesan. Bake in a 400-degree oven for 30 minutes.

This recipe yields 6 to 8 servings.
