Scalloped southwest potatoes El Goucho

Ingredients
- 1 Tbs softened butter
- 1 tsp minced garlic
- 3/4 kosher salt
- 1/2 tsp coarse ground pepper
- 1/2 tsp red pepper flakes
- 3 lbs white rose potatoes
- 1/2 cup grated Romano or Parmesan cheese
- 1 pint heavy whipping cream

Preparation
Step 1
Preheat oven to 350
Peel and slice potatoes to 1/8” thick.
Brush pan with butter. Spread garlic evenly on bottom.
Add half the red pepper and salt.
Layer in half of the potatoes. Cover with salt, red pepper, black pepper and half of the cheese.
Add the rest of the potatoes and cover with remaining cheese.
Pour in cream and cover with foil.
Poke holes in the foil before putting pan in the oven.
Bake at 350 degrees 1 ½ hours.
Remove foil and bake 15 more minutes to brown.
