CRISPY HERBED POTATOES
- new potatoes, 2+ per person
- 2 tbsp butter
- 1 tbsp olive oil
- 2 tbsp herbs de provence- more or less to taste

Cut your potatoes into 1" thick wedges.
Generously rub baking sheet with butter, ensuring it is fully coated. (Coconut oil or vegetable shortening ok)
Toss potatoes in olive oil
Sprinkle with herbs de provence, salt and pepper
Bake at 350 for 40 minutes, or until soft.
Stir potatoes around to be sure they evenly crisp.
Bake at 425 for 10 minutes, stir, and bake for another 10 minutes until all sides are crisped.
