Ingredients

    lbs brussels sprouts, halved lengthwise

  • 3

    T EVO

  • Kosher salt

  • 1/4

    t caraway seeds

  • 1/4

    C shredded carrot

  • 2

    T lime juice

  • 2

    T honey

  • 1

    minced clove garlic

  • 1/4

    thinly sliced scallions

  • 1/4

    C chopped mint

  • 1/4

    C chopped cilantro

  • 1

    jalapeño pepper, thinly sliced

Directions

Preheat oven to 425. In large bowl toss brussels sprouts with olive oil & season with salt. Spread on large rimmed baking sheet & roast for @ 40 min., stirring once or twice, until brussels sprouts are tend & crisp on the edges. Meanwhile, in small skillet, toast caraway seeds until fragrant, @ 1 min. Tranfer to spice grinder & let cool then grind to fine powder. In small bowl, whisk carrot with lime juice, honey, garlic & spice powder. In large bowl, toss hot brussels sprouts with dressing, scallions, mint, cilantro & jalapeño; season with salt & serve.
