  • 1/2 English cucumber, peeled and sliced
  • 1 navel orange, peeled, segmented, and chopped
  • 4 handfuls of fresh spinach leaves
  • 2 pomegranates, juiced

Layer onions, fennel, cucumber, and orange slices in a bowl. Toss with Pomegranate juice. Lay on bed of spinach leaves to serve.
