Roasted Garlic Pasta Primavera

Ingredients
- Garlic Sauce:
- 1 Tbs. olive oil
- 1 1/2 whole roasted garlic (OR slices roasted 15-20 minutes at 350 degrees)
- 1 c. sliced mushrooms
- 1 c. sliced tomatoes
- 1/2 c. sliced black olives
- 1/2 c. chopped artichoke hearts
- 3 c. cooked pasta
- 2 c. fresh spinach (optional)
- 1/2 c. Parmesan
- Salt and pepper to taste
- 2 chopped shallots
- 3 minced cloves of garlic
- 1 Tbs. olive oil
- 1 c. white wine
- 1 1/2 c. cream

Preparation
Step 1
Saute garlic in olive oil. Add the veggies. Toss with pasta and sauce.
Sauce:
Saute shallots and garlic in olive oil. Add wine. Bring to boil and reduce by half. Add 1 1/2 c. cream and reduce by 1/2.
