Microwave Lemon and Blueberry Self-Saucing Pudding

Ingredients
- 60 g butter
- 1 1/2 cups (225g) self-raising flour
- 1 cup (220g) caster sugar (superfine sugar)
- 1 tbsp grated lemon rind
- 3/4 cup (180ml) milk
- 1 cup (150g) fresh blueberries
- 1 cup (200g) firmly packed brown sugar
- 1/2 cup (125ml) lemon juice
- 1 1/2 cups (375ml) boiling water

Preparation
Step 1
Place butter in a 3 litre (12 cup) microwave-safe dish; microwave on HIGH (100%) about 1 minute or until butter is melted. Stir in sifted flour, caster sugar, rind and milk, beat until smooth; stir in blueberries. Sift brown sugar evenly over top; carefully pour combined juice and boiling water over brown sugar. Microwave, uncovered, on HIGH (100%) about 12 minutes or until just cooked in centre; stand 5 minutes before serving.
