Zucchini tea loaf

  • 1/2 cup oil or 1/2 cup applesauce
  • 1/2 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 2 eggs
  • 3/4 cup whole wheat flour
  • 3/4 cup all purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1 teaspoon vanilla
  • 1 cup finely shredded zucchini
  • 3/4 cup chopped walnuts or pecans



Step 1

Preheat oven to 350 F. Butter and flour an 8x4 loaf pan. In a large bowl, combine oil, granulated sugar and brown sugar. Add eggs, one at a time, beating well after each addition. In a medium bowl, stir together whole wheat flour and all purpose flour, baking powder, baking soda, salt and cinnamon. Add flour mixture to egg mixture, mix well. Stir in vanilla, zucchini and nuts. Spoon into buttered loaf pan. Bake 50 minutes or until a wooden pick inserted in the center comes out clean. Cool in pan 10 minutes. Remove from pan and cool completely on a rack. Makes 1 loaf.
