Ingredients
- CRUST
- 2 1/2 cups pecans
- 8 dates, pitted
- 2 tsp vanilla
- 2 tsp cinnamon
- 1 tsp nutmeg
- dash salt
- FILLING
- 1 cup water
- 4 cups pumkin cut into med chunks (1 small pumpkin)
- 8 dates, pitted
- 2 tsp vanilla
- 2 tsp cinnamon
- 1 tsp nutmeg
- dash ginger
- dash clove
- 1/4 tsp cardamom
- 1/2 tsp pumpkin pie spice
- dash salt
- 4 Tbsp Agar Agar
- 1/4 cup honey
- 3 Tbsp coconut oil

Preparation
Step 1
CRUST
Blend in Vitamix on high (use plunger)about 90 seconds. Spread into pie plate and press into crust shape evenly along the bottom and up the sides. Refrigerate 1 hour.
FILLING
Blend pumpkin and water in the Vitamix about 90 seconds. (use plunger) Add remaining ingredients and blend again on high until smooth and thick. Pour into pie crust and refrigerate until set.
