RED CABBAGE BRAISED WITH VINEGAR AND BACON

Ingredients
- 1 lb. bacon cut into 1 in. pieces
- 2 c. chopped onion
- 1 head of red cabbage (about 3 lbs.) cored & finely slivered
- 3 granny smith apples, cored & cut into 1 in. pieces
- 3/4 c. dry red wine
- 3/4 c. red wine vinegar
- 3 tbs. dark brown sugaar
- 2 tsp. caraway seeds
- 1 tsp. dried thyme leaves
- 1/2 tsp. black pepper

Preparation
Step 1
Cook bacon in a large deep skillet or dutch oven over low heat for 15 min. Add the onions & cook until wilted, 10 min. Add the remaining ingredients & toss well. Cover the skillet & cook over medium heat for 1 1/4 hrs. stirring occasionally. If necessary, add a bit more liquid.
