Salmon with Tomato Tarragon Cream Sauce

Ingredients
- 4 salmon fillets, skin on
- 2 Tbs. olive oil, divided
- 1/3 cup chopped shallots
- 1 can petite diced tomatoes, drained of most liquid
- 1 tsp. dried tarragon
- Salt and Pepper
- 1/2 cup heavy cream
- 8 oz. pasta of your choice, prepared and kept warm

Step 1
1. Preheat oven to 375 degrees.
2. Warm 1 Tbs. olive oil in a skillet and cook the shallots until they are soft.
3. Add the tomatoes. Bring to a simmer and cook for 20+ minutes.
4. Brush the salmon with the remaining olive oil. Heat an oven-proof skillet over high heat and sear salmon on both sides for 2 minutes each side.
5. Place the pan in the oven and bake for 5-7 minutes.
6. Lower the heat on the sauce and add the cream. Add the tarragon and salt and pepper. Cook stirring for several minutes until the sauce thickens slightly.
7. Remove the salmon from the oven and add the fillets to the sauce to coat. Remove each piece to a plate. Add the pasta to sauce and toss to coat. Serve the pasta with salmon, topping with any remaining sauce.
