Pork, Cabbage and Apple Skillet

Ingredients
- 4 Bone-in Pork chops seasoned with 1/4 tsp kosher salt and pepper
- 1 head cabbage, shredded
- 1 small red onion, sliced
- 1 c apple juice
- 1/2 tsp Kosher salt
- 1/2 tsp dried thyme
- 1 Gala apple, seeded and cut into 1/2" wedges
- 2 tsp cider vinegar

Preparation
Step 1
Heat 2 tsp oil, add chops and cook, turning once in 3 minutes. Remove and set aside. Add sliced red onion to skillet, saute 3 minutes until softened. Add shredded cabbage, apple juice, and Kosher salt and thyme. Cook, stirring often, for 5 minutes or until cabbage softens. Stir in Gala apples, and cook 2 minutes. Stir in cider vinegar, add chops back to skillet, cover and cook 2 minutes over low heat, or un;til apples are tender. Serve while warm.
