Shrimp, Garlic, with Broccoli

Ingredients

  • 8 oz. fettuccine pasta
  • 8 oz. broccoli florets
  • 2 t canola oil
  • 4 cloves garlic, sliced
  • 1 t minced ginger
  • 1/4 t salt
  • 1 lb. shrimp
  • 1/4 t crushed red pepper
  • 1 can (14 1/2oz.) chicken broth
  • 2 T cornstarch
  • 2 scallions, sliced
  • 2 T soy sauce
  • 2 T sesame oil
  • 1/3 c roasted, salted cashews

Preparation

Step 1

Cook garlic in canola oil with ginger. Add shrimp, salt & red peppper. Cook 5-6 minx. Reserve. Whisk broth and cornstarch together; pour into skillet; cook until thickened. Add scallions, soy sauce and sesame oil; cook 1 min. Combine pasta, shrimp and broth mixture. Serve sprinkled with cashews.
