Asian Greens with Garlic, Ginger and Fish Sauce

Ingredients
- 1/2 c water
- 1 1/2 t soy sauce
- 1 t fish sauce
- 2 T neutral oil (canola, grapeseed, safflower...)
- 3 garlic cloves, finely minced
- 3 t finely minced fresh ginger
- 1 lb Asian greens (bok choy or whatever)
- Pinch coarse sea salt

Preparation
Step 1
Whisk together water, soy sauce and fish sauce in a small bowl and set aside.
Heat oil in a large nonstick pan over high heat. Add garlic and ginger and cook just until they begin to sizzle, tilting the pan so the aromatics and oil get a little bath, all in all just about 30 sec. Immediately add greens along with pinch of salt to the pan and stir to coat the greens with the garlic and ginger. Add reserved soy sauce mixture and cook just until greens begin to wilt, about 3 mins. Serve immediately.
