Pina Colada Blackened Tilapia with Pineapple Salsa

Ingredients
- Salsa:
- 1 small can crushed pineapple
- 1/2 cup coconut milk
- 1 lime, zested and juiced
- 1 large clove garlic, minced
- Salt and pepper to taste
- 4 tilapia fillets
- 2 cups diced fresh pineapple
- 1/2 cup chopped red onion
- 1 jalapeno pepper, ribs and seeds removed, minced
- 1 lime, zested and juiced
- 1 handful fresh parsley, chopped
- 1/4 tsp. salt
- 1/8 tsp. black pepper

Preparation
Step 1
Place fish fillets in a resealable plastic bag. Combine first 5 ingredients and pour over the fish. Marinate in the refrigerator for up to two hours.
Prepare salsa and set aside for flavors to blend.
Remove fish from the bag and wipe off excess marinade. Brush both sides liberally with oil. Brush oil in a very hot cast iron skillet. Place fish in the skillet and sear for about 2 minutes. Cook until blackened but not burned. Turn and cook on other side.
Plate fish and serve with pineapple salsa.
NOTE: Make sure your kitchen is well ventilated, or place skillet on an outdoor grill.
