Lemon Poppy seed Muffins
Ingredients
- Wet ingredients
- 1/4 cup butter or margarine, melted
- 1 cup milk
- 1 large egg
- 1/2 teaspoon grated lemon peel
- Dry ingredients
- 2 cups flour
- 1/3 cup sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 tablespoon poppy seeds
- Topping
- 2 tablespoons sugar
- 1 tablespoon lemon juice (brush on after baking)

Preparation
Step 1
1. Preheat oven to 400 degrees.
2. Grease 12 muffin pan cups.
3. Whisk together wet ingredients in a medium bowl.
4. Combine dry ingredients in a large bowl.
5. Stir wet ingredients into dry ingredients just until combined.
6. Spoon batter evenly into prepared muffin cups, filling each about 3/4 full.
7. Bake at 400 degrees for 20 to 22 minutes, until toothpick inserted comes out clean.
8. Combine topping ingredients and sprinkle over muffins.
9. Cool in pans on wire rack for 5 minutes. Remove from pans and serve warm, or cool completely, wrap well and freeze up to 1 month. To reheat, loosely wrap each muffin in a paper towel and microwave on high 15 to 20 seconds.
