Ken's Chicken Alfredo with Angel Hair Pasta

  • 1 package of boneless skinless chicken thighs
  • 1 shallot chopped
  • 1 small onion chopped
  • 4 cloves garlic chopped
  • 2 tablespoons olive oil
  • 1 can mushrooms, stems and pieces, drained
  • 1 cube chicken bouillon
  • 1/2 can water
  • 1 jar alfredo sauce
  • 1/4 cup parmesan cheese
  • Angel Hair pasta cooked as directed



Step 1

Saute shallot and onions in olive oil for 2 minutes add garlic for another 2 minutes
De-fat the thighs and chop into 1 inch squares
salt and pepper thighs to tast
add thighs to the pan and saute 5 minutes
add mushrooms
add water and chicken bouillon, simmer until chicken is done.
When chicken is done add the alfredo sauce anc cheese
Cook until bubbly

Serve over pasta
