Scallop,Mango,and Passion Fruit Seviche

Ingredients

  • 36 small bay scallops,shucked and cleaned
  • 1/4 cup(60 ml) sliced red onion
  • 1 mango,peeled,seeded,and cut into 1/2 inch cubes
  • 1 pint(400g)ripe cherry tomatoes
  • 1 small jalapeno pepper,seeded,and minced
  • 4 stalks green onion,sliced on a bias
  • 1 tsp fresh minced ginger
  • 1 tbsp passion fruit puree,or the pulp of 2 fresh passion fruits
  • 1/4 cup(60 ml)extra virgin olive oil
  • sugar,to taste
  • salt and pepper,to taste
  • 1 large lime
  • 12 sprigs fresh cilantro

Preparation

Step 1

Combine all ingredients except the lime and cilantro in a large non-metallic bowl.If scallops are large,cut them in half.
Wash and dry the lime.With a microplane zester or fine grater,grate the lime zest over the seviche.Cut the lime in half and squeeze the juice on.Toss the seviche thoroughly and marinate for 1 hour.
Roughly chop half of the cilantro and stir it into seviche.Divide the mixture among 6 glasses and garnish each glass with a spring of cilantro or plantain chip.
