Ingredients

  • 2 Ears corn kernels removed (or 1/2 bag frozen corn)
  • 1 cup cherry tomatoes quartered
  • 1/4 cup thinly sliced basil leaves
  • 2 cups low fat (1%) milk
  • 2 cups reduced sodium vegetable broth
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup instant polenta
  • 1/4 cup crumbled goat cheese

Preparation

Step 1

Stir corn, tomato and basil together in a medium bowl.

Combine milk, broth, salt and pepper in a large saucepan, bring to a boil.

Slowly pour in polenta in a thin steady stream, whisking constantly.

Cook, while whisking, until thick and creamy, 5-6 minutes.

Divide the polenta between 4 plates, top each with corn mixture and goat cheese and basil.
