Ingredients
- 1 1/2 c. flour
- 1 tsp. cinnamon
- 1/2 tsp. baking soda
- 1/4 tsp. baking powder
- 1/4 tsp. salt
- 1/4 tsp. nutmeg
- 1 egg, beaten
- 1 c. sugar
- 1 c. unpeeled zucchini, finely shredded
- 1/4 c. oil
- 1/4 tsp. lemon zest
- 1/2 c. walnuts

Step 1
1. Preheat oven to 350. Grease the bottom and 1/2-inch up the sides of an 8x4x2-inch loaf pan.
2. Combine flour, cinnamon, baking soda, baking powder, salt, and nutmeg. Mix; form a well to the bottom of the bowl.
3) In separate bowl, combine egg, sugar, zucchini, oil, and lemon zest. Add to dry mixture all at once; stir until just moistened.
4) Fold walnuts into mixture.
5) Spoon batter into prepared pan; bake 55-60 minutes, or until a toothpick inserted into the center comes out clean. Cool in pan on a wire rack for 10 minutes before removing from pan, then cool completely.
