Sage and onion sutffing with bacon sausages

Ingredients

  • 5 1/2 tablespoons unsalted butter
  • 1 small onion, finely chopped
  • 2 cloves garlic, crushed
  • 2 tablespoons fresh sage leaves, finely chopped
  • 2 cups fresh white bread crumbs
  • 1 egg, beaten
  • 2 tablespoons unsalted butter, room temp
  • 16 slices bacon
  • 16 cocktail sausages

Preparation

Step 1

Preheat oven to 350. Heat butter in pan, add onion and garlic. Cook covered over low heat for 5 minutes or until onion is translucent. Add sage and cook gently for 1 minute. Remove from heat and stir in bread crumbs, salt and black pepper then mix in egg.

Using fingers spread butter on a 10 X 20 inch foil strip. Place stuffing down center of the foil's length leaving 3 inches of foil at each end stuffing free. Fold the foil over to enclose the stuffing and form a long roll, then twist the ends of the foil in opposite direction to tighten it into a flat sausage shape. Place on baking sheet and bake 30-40 minutes. Cut into thick slices to serve.

For sausages wrap 1 bacon around each sausage and secure with toothpick. Place in baking dish and bake for 20 minutes turning once. Remove skewers before serving.
